Foxtail millet, known as thina in Malayalam, is one of the oldest grains grown in South India. The small golden grains cook up light and separate, which makes them an easy stand-in for rice in pulao, upma, pongal or a simple evening kanji. Rinse well, use roughly two parts water to one part millet, and cook as you would rice.
